Watermelon-Lime Slushies!
What-ermelon did you say? Watermelon-Lime Slushies? Yes, please! We made a refreshing summer treat this week in Nutrition Expedition :) Here is the original recipe for our slushies, though I tweaked a few things (see below):
I started out by omitting the sugar from the recipe (the children can surely do without any added sugar :)). Also, to save some time and money, I used 2 regular limes as opposed to 8 key limes. That would have been a lot of zesting! Unfortunately, our first batch seemed a little overpowered by the lime flavor, so on the second day, I cut it down to 1 lime, and only used the juice (the children didn't seem to care for the pulpiness of the lime zest). This definitely balanced out the flavor a little more. I also froze the watermelon for a longer period of time, which helped to thicken up the slush (1 hour was not quite enough). The children enjoyed helping to add the ingredients to the blender; the toddlers felt so proud of themselves when they mastered the art of picking up the pieces of watermelon with tongs. What a great fine motor exercise to try at home :) Yay for summer slushies!
