The Very Hungry Caterpillar

It's time to shed the old, and awaken the new! Spring has sprung! We wiggled out of our winter cocoons and emerged as beautiful butterflies in Nutrition Expedition this week, as we followed along to the story of The Very Hungry Caterpillar- the yoga edition! This Cosmic Kids Yoga version of the classic story has some awesome poses for each part of the story line. What an enlightening experience 😎.

Hakuna Frittata!

"Hakuna Frittata, what a wonderful treat!" It means no worries, because it's totally delicious! The kids really got a kick out of the name of our special recipe this week in Nutrition Expedition. 

I used a modified version of this recipe. When I hear the word frittata, I immediately think of the word "matata" (hakuna matata from the Lion King), so I decided to make our recipe a little more fun by giving it a catchy name 😊. A frittata is an Italian dish made with fried, beaten eggs, similar to an omelette or quiche. We put our egg batter into mini muffin tins and baked them into little egg "cupcakes"! Meet Your Asparagus Farmer

Asparagus farmer Kelli came for a visit this week in Nutrition Expedition! She brought some cool asparagus seeds to look at, as well as pictures of asparagus growth and a time-lapse video. 

Did you know that asparagus plants grow red berries in the fall? This is where the seeds are contained! Growing asparagus from seed can be a lesson in patience; it can take 2-3 years before you will be able to harvest your asparagus spears 😫! To grow them from seed, you must start them indoors in a sunny location, approximately 8-12 weeks before transplanting the seedlings outdoors (when they are 2 inches tall). Then, allow 2-3 years of growth before you start cutting your harvest. Trim the spears on an angle once they reach 6 inches in length, just at the surface. Leave the ferny plants behind, so that they can nourish next year's crop. To learn more about the (captivating 😉) process of growing asparagus, click here.
