This week I made root vegetable chips
It's a super simple recipe :-)
Ingredients
- 1 medium – sweet potato
- 1 medium – beet
- 1 medium – Rutabagas, raw
- 1 medium – turnips
- 1 medium – parsnips
- 1 tablespoon – olive oil
- 1/4 teaspoon – salt
Directions
- Wash, peel and thinly slice vegetables (to 1/8 inch or thinner).
- Place all veggie slices in a bowl and drizzle with olive oil.
- Arrange slices on a cookie sheet and sprinkle with salt.
- Bake at 400 degrees for about 30 minutes, or until your veggies are crispy, but not burned!

The roasted root veggies were still quite warm, so I passed around a few pictures of what they look like growing in the ground....

Henry is looking at his veggies...I think he was a little disappointed because it was not bacon. (When he saw the cookie sheet covered with tinfoil he said, "I know what that is, it's bacon!")
I am so proud of Alena for taking a bite! (She thought the reddish stain from the beets was blood. I reassured her that it wasn't.)
Raegan liked the veggies alot...She even asked for seconds!!
I think Annalee was trying to figure out which veggies she had on her plate....Great thinking Anna!
