Can You Guess What It Is?
Hint: It grows on a stalk, has a husk on the outside, and is yellow on the inside...that's right, it's corn! We learned all about the characteristics of corn, how it benefits our bodies, and explored a fresh ear of sweet corn this week in Nutrition Expedition!
Corn often gets a bad rap as being lacking in nutrients, but that's actually not true (of course, if you add lots of tasty butter and salt, that's a different story 😊). While sweet corn does have a higher natural sugar content than most veggies, it does carry a decent amount of protein, 10% of your daily value in fiber and vitamin C, and 6% of your daily value in vitamin A. The large amount of soluble fiber it contains even helps to decrease your cholesterol! When it's cooked, research has actually shown that the levels of beneficial antioxidants and phytochemicals it contains increases. So, don't feel too guilty adding it to your summer barbecue 🌽!
