Week 28 of Nutrition Expedition: Baby Chicks and Carrot Pizzas!

Baby Chicks and Carrot Pizzas!

What an "eggciting" week we had in Nutrition Expedition! The children had a blast making their own baby chicks and carrot pizzas!

For the egg chicks, I gave each child a half of a boiled egg, 2 black sesame seeds for the eyes, and a carrot slice cut into a triangular shape for the beak. They turned out absolutely adorable, too cute to eat (almost :))! We talked about how eggs are good "brain food", how they contain lots of protein for our muscles, and are packed full of other good vitamins and nutrients. For the carrot pizza, I baked up a few batches of homemade pizza crust prior to our lesson. It's a very simple, healthier-alternative-to-store-bought-crust, two-ingredient recipe:

Greek Yogurt Pizza Crust

1 Cup Self-Rising Flour (I used King Arthur brand, unbleached)
1 Cup Plain Nonfat Greek Yogurt


In a large mixing bowl, combine both ingredients (with a spoon or stand mixer). I added a little more flour as I kneaded the dough, as it was a bit sticky at first. On a lightly-greased pizza pan, press the dough out as thin or thick as you prefer. Bake at 350 for approximately 10-15 minutes, or until lightly golden. The kids loved it! After I gave them a slice of the pizza crust, I instructed them to spread cream cheese (we used the light version) all over it so that the carrots and broccoli would stick. They covered their pizza slice with freshly-grated carrots, and added a few small broccoli florets along the top so that it resembled a carrot with a stem! Nothing like a good veggie pizza! 

I was lucky enough to share our nutrition program with the school-agers this week, as it was spring break! They loved doing "I Am Strong" Yoga (see infographic below), which I did with the younger ages, also. I'm looking forward to adding the school-agers into the Nutrition Expedition schedule this summer! 



The infants enjoyed looking at the book Carrots Grow Under the Ground, by Anne Rooney, and some even got to eat their own carrot pizza (with very finely ground carrots and steamed broccoli).
