Cookie Dough Hummus
Cookie dough hummus? Sounds strange, I know, but the children loved it! Thanks to Ms. Chantal for the great recipe idea, we made our very own "Cookie Dough Hummus" this week in Nutrition Expedition! See the recipe below, along with a link to the blog it came from:
We started out by adding 2 cans of rinsed chick peas to the food processor (we doubled the recipe to accommodate a large class). Next, we added the salt, baking soda, vanilla extract, nut butter (we used soy, as we are a peanut-free center), brown sugar (we stayed with the 2/3 cup instead of doubling this part of the recipe), and oats. As it mixed, I added a few splashes of 1/2% milk to help make the hummus smoother. After we had the right consistency, I turned off the food processor and we stirred in mini chocolate chips. I served each child a bowl of the hummus, along with graham crackers for dipping. They absolutely loved it! Everyone was asking if I would "give their mommy the recipe"! I will leave a copy of this recipe in your child's cubby next week.
The infants had a fun time squishing the hummus through a ziploc bag, and practicing yoga!
