Kale Study
What better way to start out a new week than exploring some fresh kale? The children had a lot of fun guessing what was in my "Mystery Bag" this week. They knew it was something leafy, like lettuce! After I revealed it's contents, I let them pass the kale stalk around to investigate (see above picture :)). We talked about all of the vitamins and nutrients in kale, and what it does for our bodies. I tossed chopped kale in a bowl and drizzled it with a little olive oil and fresh-squeezed lemon juice, then offered it to taste.The infants enjoyed exploring the kale, and were very curious! They were perplexed by it's texture!
It was also another "nibble tray" week; they got to choose from lima beans, fresh-picked blueberries (from Ms. Amanda B.), celery, pummelo (the largest member of the citrus family, tastes a bit like grapefruit), low-fat mozzarella cheese sticks, and sweet peppers. What a tasty treat!
As an added bonus for the 4's class this week, our four-year-old friend Adam brought me an eggplant and wanted me to cook something for his class! So, I sliced it up, added a layer of tomato-basil sauce and mozzarella cheese, and baked it in the oven for about 30 minutes. The children called it "eggplant pizza"! It was delicious!
