Beet-berry Chocolate

We continued our exploration of beets this week in Nutrition Expedition, and made a beet-berry chocolate cake! It was more of a bread, but the word cake is more enticing around here...imagine 😉.
Here is the recipe, a healthier alternative to chocolate cake (found at Today's Parent):
I would recommend swapping out the honey with about 1/2-to-3/4 cup organic cane sugar, as the honey did not offer enough sweetness to balance out the bitterness of the cocoa powder. Our first few batches did not turn out quite as good as we were hoping, so I had to tweak the recipe a bit.
For the older infants who eat table food, I served them "Baby Borscht". Borscht is a beet soup that originated in the Ukraine, but is widely popular in many European countries, especially Russia. It was quite tasty!
