Week 2 of Nutrition Expedition: Yogurt Parfaits

Yogurt Parfaits!

This week in Nutrition Expedition, Chef Combo dropped by for a visit! Chef Combo comes from Italy, and he is looking forward to helping the children create their own nutritious snacks. Some of his favorite foods include broccoli and whole grain pasta! He will be returning each month to instruct a hands-on cooking activity!

Chef brought with him Greek yogurt, crushed graham crackers, fresh diced pineapple, kiwi, peaches, strawberries, bananas, etc. He asked the children to guess what they would be making...Yogurt Parfaits! Chef explained and demonstrated all the steps to follow in order to make their own parfaits:  first a scoop of yogurt, a sprinkle of graham crumbs, fresh fruit of their choice, another scoop of yogurt, topped of with another sprinkle of grahams. Then it was the children's turn to make their own. It sure was tricky remembering all the steps, but delicious parfaits were created! What a yummy, healthy treat for all! Be sure to copy the recipe below.

Our infant class enjoyed meeting Chef Combo (they loved his tickly mustache) , a relaxing session of yoga and pilates, and playing with Ms. Chantal's fruit shakers!

In addition to our regular routine, we also had a bonus treat this week! Good News Farms (out of Edmore, MI) was gracious enough to donate a Farmbox to our program! It was filled with delicious organic and veganically grown greens (Italian basil, kale, micro greens, and beet greens), tomatoes, apples, bananas, yellow bell pepper, and a spaghetti squash! I went around to the older classrooms (2 and up) and shared the surprise. They were so curious about the contents of the Farmbox, and were very excited to try each item. I put together a tasty salad and sent it to the classrooms for lunch. I'll be cooking up something yummy with the spaghetti squash next week. Check out the photos below! Thank you, Good News Farms! 
Greek Yogurt Parfaits
What You Need:  clear parfait cup (so you can see the colorful layers), Greek yogurt, crushed graham crackers, a variety of chopped fruit (blueberries, strawberries, bananas, kiwi, peaches, etc.)

What To Do:  Start by adding a scoop of yogurt to your parfait cup. Add a layer of crushed grahams. Add a layer of fruit, followed by another layer of yogurt and crushed grahams. You can even add more layers if you're feeling extra hungry! Enjoy!
